T's Blueberry Cake


T's Blueberry Cake is Delicious! Each bite is nutritious and moist leaving you wanting more. This plant-based cake does not have any eggs or cows milk. The Ground Flax Seed is the egg replacement and the Almond Milk is the cows milk replacement. Now you can enjoy an awesome Blueberry Cake without the acidic side effects. Pre-Heat Oven at 350 degrees

Set to the side:

1/2 cup of hot water mix with 2 teaspoons of flaxseed meal


Dry Ingredients:

2 cups Spelt Flour

1 1/2 cups Coconut Sugar

2 Tbsp Flaxseed meal

1/2 Tbsp Baking soda

2 Tbsp Baking Powder

1/2 tsp Himalayan or Sea salt

Stir these ingredients together...

​Wet Ingredients:

1 Tsp Vanilla Extract

1/2 cup of Blueberries

1/2 cup Coconut Oil

1 1/4 cups of warm Almond Milk ( Stir in last and slow until smooth )

First, mix the Dry ingredients together in a large bowl. Mix it good... Then add the Hot water with Flax Seed to the large bowl with the Dry Ingredients. Next, add the Wet ingredients one by one in the large bowl with the Dry ingredients. Be sure to slowly pour in the Almond Milk and stir until the texture gets very smooth. Add more almond milk if need be. Grease your cake pan of choice with coconut oil. Pour the final mixture in the pan and place it the pre-heated oven. After 15-20 min, stick a knife in the cake to see if its done. If the knife comes up wet, it needs to stay in the oven a few more minutes. If it's dry, let cool and enjoy!
